What do you consider a good trade off for image quality and file size. Where do you draw the line on size and quality for clarity and page load speed?

That really depends on the image and how its being used. Anything above the fold (ie on screen when the page first loads) you want to keep as small as possible. Anything else you can lazyload using something like this https://github.com/aFarkas/lazysizes

Never an issue for me doing live shows, it's all about having a decent camera on the laptop which most laptops today have

No arguments there how ever Google cares for fast loading pages over image quality, something to keep in mind.
