Lately I have to do it every week with all the updates and security notices i get form the system. Is it okay to reboot a server so often.

You should not have to do it that often. Do you know what is causing you to reboot so much? If things are getting slow maybe take a look at what processes are running and what it taking up your resources. Servers are made to be up for months if not years at a time with very little down time.
I have a JAVA listener running on a server that has been running non stop for like 6 months.

If you are running a linux server and have shell access you can install glances to monitor resources, install iftop to monitor network activity, and either call or install top to monitor process activity.
If you are running ubuntu as your server operating system you can do so by doing the following.
First Update Your package monitor
sudo apt-get update
To install Glances
sudo apt-get install glances
To run Glances
sudo glances
To install iftop
sudo apt-get install iftop
To run iftop
sudo iftop
To run top
sudo top
This is assuming you have a linux based server and also have terminal access.
This can help you identify what may be wrong.
You can also review server logs via terminal by navigating to your server log location and using something like vi, vim, nano, emacs or really any other terminal text editor.

Not had to reboot it so far. My host manages it and I suppose if they need to reboot it they will.

There is no real reason to reboot a server unless you do security updates, but tat is a whole other can of worms.

It makes absolutely no sense to regularly reboot the server, linux is very stable unlike the crap we use on desktops.
