if so, how do they compare to double-column blogs?

you can put categories in the side bar of a double column blog

but how do surfers find categories in a single column blog ?

You can use widgets to put the categories on top or footer depending on the theme you use

Widgets make WP very effective. A blog without them would require a lot of hard coding.
