I have taken on new clients with NO sitemap and google had indexed only a few of their page. After adding a sitemap and telling Google about it, all their pages were indexed.

I have witnessed this several times.

A sitemap submitted is a must.

Don't forget to sign up for google search console, bing and the others and submit your site maps to them.

Did you check search console for errors and pages indexed etc. Sometime you see results within minutes.
