Just think of sex as seperate from gender. Sex is biological, gender is not. Consider them to be two seperate issues and it all makes sense.

Sex is biological and gender is a social construct. Two seperate identifiers that mostly align but not always. Sex and sexual orientation don't always align. This is similar.

We can only be born with XX or XY chromosomes if I remember this stuff from science. So we must be born female or male biologically. Sexual orientation is a wide spectrum and so that is another issue.
